Description

Golden baked falafel bites packed with fresh herbs and warm spices, served with a creamy and slightly spicy mint tahini dip for a fresh and flavorful plant based dish.


Ingredients

  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 1 cup fresh parsley, packed
  • 1/2 cup fresh cilantro, packed
  • 3 cloves garlic, minced
  • 1/2 medium red onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil, divided
  • 1/2 cup tahini
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons lemon juice
  • 2 to 4 tablespoons water, as needed
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Add chickpeas, parsley, cilantro, garlic, red onion, cumin, coriander, salt, black pepper, and 1 tablespoon olive oil to a food processor.
  3. Pulse until the mixture is combined but still slightly textured, scraping down the sides as needed.
  4. Scoop the mixture into small balls and place evenly spaced on the prepared baking sheet.
  5. Brush or lightly drizzle the remaining 1 tablespoon olive oil over the falafel bites.
  6. Bake for 20 to 25 minutes, flipping halfway through, until golden brown and slightly crisp on the outside.
  7. While the falafel bakes, whisk together tahini, chopped mint, lemon juice, red pepper flakes, and enough water to create a smooth and creamy dip.
  8. Adjust seasoning of the dip if needed.
  9. Serve warm falafel bites with spicy mint tahini dip on the side.

Notes

  • Do not overprocess the falafel mixture to maintain texture.
  • Chill the mixture for 20 minutes if it feels too soft to shape.
  • Add water gradually to the dip to control thickness.
