- ½ cup vanilla protein powder
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- ½ cup heavy cream
- 1 ½ cups dark chocolate chips
- 2 tablespoons coconut oil
- ½ cup chopped peanuts
Instructions
- In a mixing bowl, whisk together Greek yogurt, vanilla protein powder, honey, vanilla extract, and heavy cream until smooth and fully combined.
- Pour the mixture evenly into popsicle molds and insert sticks.
- Freeze for at least 4 hours or until completely solid.
- In a microwave safe bowl, melt dark chocolate chips with coconut oil in 30 second intervals, stirring between each interval until smooth.
- Remove frozen bars from molds and quickly dip each one into the melted chocolate, coating evenly.
- Immediately sprinkle chopped peanuts over the chocolate coating before it sets.
- Place coated bars on parchment paper and freeze for an additional 10 minutes to fully set the shell.
- Serve directly from the freezer.
