- 1/2 pound ground beef
- 1/2 pound ground pork
- 1/3 cup breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1 large egg
- 3 cloves garlic, minced
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup yellow onion, finely chopped
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 8 cups chicken broth
- 3/4 cup acini di pepe pasta
- 3 cups fresh spinach, roughly chopped
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Mix ground beef, ground pork, breadcrumbs, Parmesan, egg, half of garlic, 1/2 teaspoon salt, and black pepper. Form small meatballs.
- Brown meatballs in batches for 3 to 4 minutes and remove.
- Sauté onion, carrots, celery, and remaining garlic for 3 to 4 minutes.
- Add chicken broth and bring to a simmer. Stir in pasta and cook 8 to 10 minutes.
- Return meatballs to pot and simmer 5 minutes until cooked through.
- Stir in spinach until wilted. Adjust seasoning and serve.
Notes
- Keep meatballs small for quick cooking.
- Simmer gently for clear broth.
- Add greens at the end.
- Store up to four days refrigerated.
