Description

Classic Italian Wedding Soup with tender mini meatballs, delicate pasta, and fresh spinach in a light savory broth.


Ingredients

  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1/3 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup yellow onion, finely chopped
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 8 cups chicken broth
  • 3/4 cup acini di pepe pasta
  • 3 cups fresh spinach, roughly chopped

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Mix ground beef, ground pork, breadcrumbs, Parmesan, egg, half of garlic, 1/2 teaspoon salt, and black pepper. Form small meatballs.
  3. Brown meatballs in batches for 3 to 4 minutes and remove.
  4. Sauté onion, carrots, celery, and remaining garlic for 3 to 4 minutes.
  5. Add chicken broth and bring to a simmer. Stir in pasta and cook 8 to 10 minutes.
  6. Return meatballs to pot and simmer 5 minutes until cooked through.
  7. Stir in spinach until wilted. Adjust seasoning and serve.

  • Keep meatballs small for quick cooking.
  • Simmer gently for clear broth.
  • Add greens at the end.
  • Store up to four days refrigerated.
