Soft Japanese dorayaki pancakes filled with sweet red bean paste. A classic and comforting Japanese treat.

- 1 cup all purpose flour
- 2 large eggs
- 1/2 cup granulated sugar
- 1 tablespoon honey
- 2 tablespoons milk
- 1 teaspoon baking powder
- 1 to 2 tablespoons water
- 1 cup sweet red bean paste
Instructions
- Whisk eggs, sugar, and honey until smooth.
- Sift in flour and baking powder and mix gently.
- Add milk and water to adjust consistency.
- Let batter rest for 10 minutes.
- Cook small pancakes in nonstick pan until golden on both sides.
- Cool slightly and sandwich with red bean paste.
Notes
- Cook on medium low heat for even browning.
- Flip when bubbles appear.
- Store airtight up to 4 days refrigerated.
- Use chocolate spread as alternative filling.
