Traditional Turkish kuru fasulye made with tender white beans simmered in a rich tomato sauce with beef.
Ingredients

- 2 cups dried white beans, soaked overnight
- 1 pound beef cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup diced tomatoes
- 4 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Drain soaked beans.
- Brown beef in olive oil and set aside.
- Sauté onion and garlic.
- Stir in tomato paste and paprika, then diced tomatoes.
- Add beef, beans, and broth. Simmer 60 to 75 minutes until tender.
- Season with salt and pepper and serve hot.
Notes
- Soak beans overnight for best texture.
- Simmer gently for tender beans.
- Tastes better the next day.
