Description

Traditional Turkish kuru fasulye made with tender white beans simmered in a rich tomato sauce with beef.


Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 pound beef cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Drain soaked beans.
  2. Brown beef in olive oil and set aside.
  3. Sauté onion and garlic.
  4. Stir in tomato paste and paprika, then diced tomatoes.
  5. Add beef, beans, and broth. Simmer 60 to 75 minutes until tender.
  6. Season with salt and pepper and serve hot.

Notes

  • Soak beans overnight for best texture.
  • Simmer gently for tender beans.
