- 12 lasagna noodles, cooked al dente
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 3 cups marinara sauce
- 1 cup fresh spinach, chopped, optional
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish
Instructions
- Preheat oven to 375 degrees Fahrenheit and lightly grease a baking dish.
- In a mixing bowl, combine ricotta cheese, 1 cup mozzarella, Parmesan cheese, egg, salt, black pepper, and chopped spinach if using.
- Spread a thin layer of marinara sauce on the bottom of the baking dish.
- Lay cooked lasagna noodles flat on a clean surface.
- Spread ricotta mixture evenly over each noodle.
- Roll each noodle tightly from one end to the other.
- Place roll ups seam side down in the prepared baking dish.
- Pour remaining marinara sauce evenly over the rolls.
- Sprinkle remaining mozzarella cheese on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until bubbly and lightly golden.
- Let rest for 5 minutes, garnish with parsley, and serve warm.
Notes
- Do not overcook noodles before rolling.
- Drain noodles well to prevent excess moisture.
- Let the dish rest before serving for cleaner portions.
