Instructions
- Preheat oven to 400°F and line a large baking sheet with parchment paper.
- In a small bowl, mix olive oil, minced garlic, salt, and black pepper until well combined.
- Arrange cabbage wedges in a single layer on the prepared baking sheet.
- Brush the garlic oil mixture generously over both sides of each cabbage wedge.
- Roast for 35 to 40 minutes, carefully flipping halfway through, until the edges are golden brown and the centers are fork tender.
- Remove from the oven and immediately sprinkle with lemon zest and drizzle with fresh lemon juice.
- Top with freshly chopped parsley and serve warm.
