- 1 large head cauliflower, about 900 grams, cut into florets
- 2 tablespoons unsalted butter, about 30 grams
- 60 milliliters heavy cream
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets and cook for 12 to 15 minutes until very tender.
- Drain the cauliflower thoroughly in a colander and let it sit for a few minutes to release excess moisture.
- Transfer the warm cauliflower to a food processor.
- Add the unsalted butter, heavy cream, minced garlic, salt, and black pepper.
- Blend until smooth and creamy, scraping down the sides as needed.
- Taste and adjust seasoning if necessary.
- Spoon into a serving bowl and sprinkle with fresh parsley.
- Serve warm and enjoy.
