Ingredients

  • 1 large head cauliflower, about 900 grams, cut into florets
  • 2 tablespoons unsalted butter, about 30 grams
  • 60 milliliters heavy cream
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the cauliflower florets and cook for 12 to 15 minutes until very tender.
  3. Drain the cauliflower thoroughly in a colander and let it sit for a few minutes to release excess moisture.
  4. Transfer the warm cauliflower to a food processor.
  5. Add the unsalted butter, heavy cream, minced garlic, salt, and black pepper.
  6. Blend until smooth and creamy, scraping down the sides as needed.
  7. Taste and adjust seasoning if necessary.
  8. Spoon into a serving bowl and sprinkle with fresh parsley.
