  • 2 tablespoons white miso paste

  • 3 cups cooked white rice
  • 1 cucumber, sliced
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon white miso paste (for sauce)
  • 1 tablespoon lime juice
  • 1 to 2 tablespoons water

Instructions

  1. In a bowl, mix 2 tablespoons white miso paste, soy sauce, honey, minced garlic, and sesame oil. Coat chicken and marinate for 15 minutes.
  2. Heat a skillet over medium heat and cook chicken for 5 to 6 minutes per side until fully cooked and caramelized.
  3. Let chicken rest for 5 minutes, then slice.
  4. In a small bowl, whisk mayonnaise, 1 tablespoon white miso paste, lime juice, and water until smooth.
  5. Divide cooked rice among 4 bowls.
  6. Top with sliced chicken, cucumber, shredded carrots, and green onions.
  7. Drizzle miso mayo sauce over the top and serve.
