- 2 tablespoons white miso paste

- 2 cloves garlic, minced

- 3 cups cooked white rice
- 1 cucumber, sliced
- 1 cup shredded carrots
- 2 green onions, sliced
- 1/2 cup mayonnaise
- 1 tablespoon white miso paste (for sauce)
- 1 tablespoon lime juice
- 1 to 2 tablespoons water
Instructions
- In a bowl, mix 2 tablespoons white miso paste, soy sauce, honey, minced garlic, and sesame oil. Coat chicken and marinate for 15 minutes.
- Heat a skillet over medium heat and cook chicken for 5 to 6 minutes per side until fully cooked and caramelized.
- Let chicken rest for 5 minutes, then slice.
- In a small bowl, whisk mayonnaise, 1 tablespoon white miso paste, lime juice, and water until smooth.
- Divide cooked rice among 4 bowls.
- Top with sliced chicken, cucumber, shredded carrots, and green onions.
- Drizzle miso mayo sauce over the top and serve.
