  • 3 cups cooked jasmine rice, cold and day old
  • 2 tablespoons neutral oil, divided
  • 12 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon maple syrup
  • 1 teaspoon sesame oil
  • 2 tablespoons green onions, sliced
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of neutral oil.
  2. In a small bowl, whisk together white miso paste, soy sauce, rice vinegar, maple syrup, sesame oil, and black pepper until smooth.
  3. Add the cold jasmine rice to the skillet and press it firmly into an even layer. Cook undisturbed for 8 to 10 minutes until the bottom becomes golden and crispy.
  4. In a separate pan, heat the remaining 1 tablespoon of neutral oil. Add the sliced cremini mushrooms and cook for 5 to 7 minutes until browned.
  5. Stir in the minced garlic and cook for 30 seconds until fragrant.
  6. Pour the miso glaze over the mushrooms and cook for 1 to 2 minutes until slightly thickened and glossy.
  7. Spoon the miso mushrooms over the crispy rice and sprinkle with sliced green onions and sesame seeds.
  8. Serve immediately while hot and crisp.
