Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter. Press into tart pan and chill 20 minutes.
  2. Beat cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla until smooth.
  3. Whip heavy cream to soft peaks and fold into lemon mixture.
  4. Spread filling into crust.
  5. Drop strawberry puree on top and swirl gently.
  6. Chill at least 4 hours until set.
  7. Slice and serve chilled.
