- 1 1/2 cups graham cracker crumbs
- 2 tablespoons granulated sugar
- 6 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tablespoon fresh lemon zest
- 3 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, pureed
Instructions
- Mix graham cracker crumbs, sugar, and melted butter. Press into tart pan and chill 20 minutes.
- Beat cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla until smooth.
- Whip heavy cream to soft peaks and fold into lemon mixture.
- Spread filling into crust.
- Drop strawberry puree on top and swirl gently.
- Chill at least 4 hours until set.
- Slice and serve chilled.
