Description

Classic Peach Melba made with tender poached peaches, smooth vanilla ice cream, and vibrant raspberry sauce for a light and elegant dessert.


Ingredients

  • 4 fresh peaches
  • 1 cup granulated sugar
  • 3 cups water
  • 1 1/2 cups fresh raspberries
  • 1 tablespoon lemon juice
  • 4 scoops vanilla ice cream

Instructions

  1. In a saucepan, combine water and granulated sugar. Bring to a gentle simmer to create a poaching syrup.
  2. Add whole peaches to the simmering syrup and cook for 8 to 10 minutes until just tender.
  3. Remove peaches and allow them to cool slightly. Peel the skins and slice each peach in half, removing the pits.
  4. In a blender, combine raspberries and lemon juice. Blend until smooth.
  5. Strain the raspberry mixture through a fine mesh sieve to remove seeds and create a smooth sauce.
  6. Allow peaches and raspberry sauce to cool completely.
  7. To assemble, place peach halves in a dessert bowl.
  8. Add a scoop of vanilla ice cream beside the peaches.
  9. Spoon raspberry sauce generously over the peaches and ice cream.
  10. Serve immediately while the ice cream is cold and slightly melting.

  • Use ripe but firm peaches for best texture.
  • Do not overcook the peaches to avoid mushiness.
