- 4 fresh peaches
- 1 cup granulated sugar
- 3 cups water
- 1 1/2 cups fresh raspberries
- 1 tablespoon lemon juice
- 4 scoops vanilla ice cream
Instructions
- In a saucepan, combine water and granulated sugar. Bring to a gentle simmer to create a poaching syrup.
- Add whole peaches to the simmering syrup and cook for 8 to 10 minutes until just tender.
- Remove peaches and allow them to cool slightly. Peel the skins and slice each peach in half, removing the pits.
- In a blender, combine raspberries and lemon juice. Blend until smooth.
- Strain the raspberry mixture through a fine mesh sieve to remove seeds and create a smooth sauce.
- Allow peaches and raspberry sauce to cool completely.
- To assemble, place peach halves in a dessert bowl.
- Add a scoop of vanilla ice cream beside the peaches.
- Spoon raspberry sauce generously over the peaches and ice cream.
- Serve immediately while the ice cream is cold and slightly melting.
Notes
- Use ripe but firm peaches for best texture.
- Do not overcook the peaches to avoid mushiness.
- Straining the raspberry sauce ensures a smooth finish.
- Assemble just before serving for best presentation.
