- 1 whole chicken 4 to 5 pounds
- 4 cloves garlic, minced
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1 cup fresh cilantro
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt or sour cream
- 1 jalapeño, seeded
- 1 clove garlic
- 1 tablespoon fresh lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Instructions
- Preheat oven to 425 degrees F.
- Mix garlic, lime juice, olive oil, soy sauce, cumin, paprika, oregano, salt, and pepper.
- Rub marinade over chicken and marinate at least 4 hours.
- Roast 40 to 50 minutes until internal temperature reaches 165 degrees F.
- Blend all sauce ingredients until smooth.
- Let chicken rest 10 minutes before slicing.
- Serve with aji verde sauce.
