Description

Juicy roasted Peruvian chicken seasoned with garlic and spices, served with creamy aji verde green sauce.


Ingredients

  • 1 whole chicken 4 to 5 pounds
  • 4 cloves garlic, minced
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup fresh cilantro
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 1 jalapeño, seeded
  • 1 clove garlic
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 425 degrees F.
  2. Mix garlic, lime juice, olive oil, soy sauce, cumin, paprika, oregano, salt, and pepper.
  3. Rub marinade over chicken and marinate at least 4 hours.
  4. Roast 40 to 50 minutes until internal temperature reaches 165 degrees F.
  5. Blend all sauce ingredients until smooth.
  6. Let chicken rest 10 minutes before slicing.
  7. Serve with aji verde sauce.
