  • 4 cups pumpkin puree
  • 3 cups vegetable broth
  • 1/2 cup heavy cream or coconut milk
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Toasted pumpkin seeds for garnish

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add diced onion and cook until soft and translucent.
  3. Add garlic and cook briefly.
  4. Stir in pumpkin puree and vegetable broth until combined.
  5. Add nutmeg, cinnamon, salt, and black pepper.
  6. Simmer gently for 15 to 20 minutes.
  7. Blend until smooth using an immersion blender.
  8. Stir in heavy cream or coconut milk and simmer for 5 minutes.
  9. Adjust seasoning as needed.
  10. Serve warm with toasted pumpkin seeds and a swirl of cream.
