- 1/4 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Toasted pumpkin seeds for garnish
Instructions
- Heat olive oil or butter in a large pot over medium heat.
- Add diced onion and cook until soft and translucent.
- Add garlic and cook briefly.
- Stir in pumpkin puree and vegetable broth until combined.
- Add nutmeg, cinnamon, salt, and black pepper.
- Simmer gently for 15 to 20 minutes.
- Blend until smooth using an immersion blender.
- Stir in heavy cream or coconut milk and simmer for 5 minutes.
- Adjust seasoning as needed.
- Serve warm with toasted pumpkin seeds and a swirl of cream.
