Description

A tender and juicy rack of lamb coated in a fragrant garlic and herb crust, seared and roasted to perfection. This elegant main course is perfect for special occasions and holiday dinners.


Ingredients

  • 1 rack of lamb, about 1 1/2 to 2 pounds, frenched
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, Dijon mustard, salt, black pepper, and 1 tablespoon olive oil.
  3. Pat the rack of lamb dry with paper towels.
  4. Heat the remaining 1 tablespoon olive oil in an oven safe skillet over medium high heat.
  5. Sear the rack of lamb for 2 to 3 minutes per side until browned.
  6. Remove from heat and brush the herb mixture evenly over the lamb.
  7. Transfer the skillet to the oven and roast for 15 to 20 minutes until the internal temperature reaches 130°F to 135°F for medium rare.
  8. Remove from the oven and let rest for 10 minutes before slicing between the bones.

Notes

  • Bring lamb to room temperature before cooking.
  • Use a meat thermometer for best accuracy.
  • Allow to rest before slicing to retain juices.
