Description

- 1 rack of lamb, about 1 1/2 to 2 pounds, frenched
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Preheat the oven to 400°F.
- In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, Dijon mustard, salt, black pepper, and 1 tablespoon olive oil.
- Pat the rack of lamb dry with paper towels.
- Heat the remaining 1 tablespoon olive oil in an oven safe skillet over medium high heat.
- Sear the rack of lamb for 2 to 3 minutes per side until browned.
- Remove from heat and brush the herb mixture evenly over the lamb.
- Transfer the skillet to the oven and roast for 15 to 20 minutes until the internal temperature reaches 130°F to 135°F for medium rare.
- Remove from the oven and let rest for 10 minutes before slicing between the bones.
Notes
- Bring lamb to room temperature before cooking.
- Use a meat thermometer for best accuracy.
- Allow to rest before slicing to retain juices.
