Description

Shorbet Adas, a creamy vegan Middle Eastern lentil soup made with red lentils, cumin, and fresh lemon juice.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 1 large carrot, chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups red lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and carrot for 5 to 7 minutes, then add garlic.
  3. Add lentils, broth, cumin, turmeric, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer 20 to 25 minutes until lentils are soft.
  5. Blend until smooth.
  6. Stir in lemon juice and adjust seasoning.
  7. Serve warm.

Notes

  • Rinse lentils before cooking.
  • Blend carefully while hot.
  • Add water if soup thickens too much.
  • Store up to four days refrigerated.
