Description
Shorbet Adas, a creamy vegan Middle Eastern lentil soup made with red lentils, cumin, and fresh lemon juice.
Ingredients

- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 1 large carrot, chopped
- 3 cloves garlic, minced
- 1 1/2 cups red lentils, rinsed
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh lemon juice
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and carrot for 5 to 7 minutes, then add garlic.
- Add lentils, broth, cumin, turmeric, salt, and pepper. Bring to a boil.
- Reduce heat and simmer 20 to 25 minutes until lentils are soft.
- Blend until smooth.
- Stir in lemon juice and adjust seasoning.
- Serve warm.
Notes
- Rinse lentils before cooking.
- Blend carefully while hot.
- Add water if soup thickens too much.
- Store up to four days refrigerated.
