Ingredients

- 3 cups fresh or frozen green peas
- 1/4 cup finely diced red onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon chaat masala
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 cup plain Greek yogurt
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring water to a boil and cook peas for 2 to 3 minutes until tender. Drain and cool slightly.
- Toss peas with olive oil, red onion, cilantro, chaat masala, cumin, salt, and lemon juice.
- Whisk yogurt with lemon zest, lemon juice, salt, and black pepper.
- Spoon pea mixture into serving bowl and top with lemon raita.
- Swirl gently and serve fresh.
Notes
- Do not overcook peas.
- Use fresh lemon juice for best flavor.
- Store components separately if making ahead.
