A layered strawberry shortcake ice cream cake with vanilla cake, creamy ice cream, whipped topping, and a crunchy strawberry crumble.
Ingredients

- 1 prepared vanilla cake layer, cooled
- 1 quart vanilla ice cream
- 1 quart strawberry ice cream
- 2 cups whipped topping or whipped cream
- 1 cup crushed golden sandwich cookies
- 1/4 cup freeze dried strawberries, crushed
- 2 tablespoons melted butter
Instructions
- Line springform pan and place vanilla cake layer inside.
- Spread softened vanilla ice cream over cake and freeze 30 minutes.
- Spread strawberry ice cream over vanilla layer and freeze until firm.
- Mix crushed cookies, freeze dried strawberries, and melted butter for crumble.
- Frost cake with whipped topping.
- Press crumble onto top and sides.
- Freeze at least 2 hours before serving.
- Slice with warm knife and serve.
