Description

A layered strawberry shortcake ice cream cake with vanilla cake, creamy ice cream, whipped topping, and a crunchy strawberry crumble.


Ingredients

  • 1 prepared vanilla cake layer, cooled
  • 1 quart vanilla ice cream
  • 1 quart strawberry ice cream
  • 2 cups whipped topping or whipped cream
  • 1 cup crushed golden sandwich cookies
  • 1/4 cup freeze dried strawberries, crushed
  • 2 tablespoons melted butter

Instructions

  1. Line springform pan and place vanilla cake layer inside.
  2. Spread softened vanilla ice cream over cake and freeze 30 minutes.
  3. Spread strawberry ice cream over vanilla layer and freeze until firm.
  4. Mix crushed cookies, freeze dried strawberries, and melted butter for crumble.
  5. Frost cake with whipped topping.
  6. Press crumble onto top and sides.
  7. Freeze at least 2 hours before serving.
  8. Slice with warm knife and serve.
