- 400 grams firm tofu, pressed and cubed
- 3 tablespoons cornstarch
- 3 tablespoons vegetable oil
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup pineapple chunks
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 3 tablespoons rice vinegar
- 3 tablespoons soy sauce
- 3 tablespoons brown sugar
- 1/2 cup water
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- 2 green onions, sliced
Instructions
- Press the tofu for at least 15 minutes to remove excess moisture, then cut into even cubes.
- Toss the tofu cubes with 3 tablespoons cornstarch until evenly coated.
- Heat 3 tablespoons vegetable oil in a large skillet over medium heat and cook the tofu until golden and crispy on all sides. Remove and set aside.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add chopped red and green bell peppers and cook for 2 to 3 minutes until slightly tender but still crisp.
- Stir in the pineapple chunks.
- In a bowl, whisk together ketchup, rice vinegar, soy sauce, brown sugar, and 1/2 cup water. Pour the mixture into the skillet and bring to a gentle simmer.
- Add the cornstarch slurry and cook until the sauce thickens and becomes glossy.
- Return the crispy tofu to the skillet and gently toss to coat evenly in the sauce.
- Garnish with sliced green onions and serve immediately.
