Description

Hearty Tuscan tortellini mushroom and sausage soup with creamy tomato broth, tender pasta, and savory sausage.


Ingredients

  • 1 pound Italian sausage
  • 2 cups sliced mushrooms
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 cup crushed tomatoes
  • 1/2 cup heavy cream
  • 9 ounces cheese tortellini
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Grated Parmesan for serving

Instructions

  1. Brown sausage in olive oil.
  2. Add onion and mushrooms and cook until softened.
  3. Stir in garlic, broth, tomatoes, and seasoning and simmer.
  4. Add tortellini and cook until tender.
  5. Stir in cream and spinach and heat through.
  6. Serve with grated Parmesan.

Notes

  • Brown sausage well for best flavor.
  • Add cream at the end.
  • Add extra broth when reheating if needed.
