Description

Fresh Tuscan tortellini salad with cheese tortellini, cherry tomatoes, spinach, mozzarella, and a tangy Italian vinaigrette.


Ingredients

  • 1 1/2 cups cherry tomatoes, halved
  • 3 cups fresh spinach, chopped
  • 1/4 cup red onion, thinly sliced
  • 1 cup mozzarella balls
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Cook tortellini according to package instructions and drain.
  2. Combine tomatoes, spinach, red onion, and mozzarella in a bowl.
  3. Whisk olive oil, red wine vinegar, Dijon mustard, garlic, Italian seasoning, salt, and pepper.
  4. Toss tortellini with vegetables and dressing.
  5. Stir in basil and chill 30 minutes before serving.
