Description
Savory vinegar chicken with figs made in one pan with crispy chicken thighs, fresh figs, red wine vinegar, and thyme. This sweet and tangy dish is elegant yet simple to prepare.

- 6 bone in skin on chicken thighs
- 8 fresh figs, stems trimmed
- 2 tablespoons olive oil
- 1/3 cup red wine vinegar
- 1 tablespoon honey
- 3 cloves garlic, smashed
- 4 sprigs fresh thyme
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F.
- Pat chicken thighs dry and season with salt and black pepper.
- Heat olive oil in an oven safe skillet over medium high heat and sear chicken skin side down for 5 to 6 minutes until golden. Flip and cook 2 minutes more.
- Add smashed garlic, fresh figs, and thyme around the chicken.
- Whisk red wine vinegar and honey together and pour over the chicken and figs.
- Transfer skillet to oven and roast for 20 to 25 minutes until chicken reaches 165°F and sauce reduces slightly.
- Spoon pan sauce over chicken and serve warm.

- Sear chicken first for best flavor.
- Use ripe but firm figs.
- Let rest briefly before serving.
